Sometimes you’re just powerless against it.

Chocolate cake with chocolate icing is my all time favorite cake. I remember as a kid I always asked for chocolate cake for my birthday – and I’m still a sucker for it to this day.

Don’t get me wrong – I love pretty much all kinds of cake, but this one gets the blue ribbon in my book. Now, I know there’s different kinds of chocolate cake – Devil’s Food, Coca Cola chocolate cake, German chocolate . . . and they’re all just as good as they can be. But this ‘Black Magic’ version – I’m not sure if it’s the buttermilk, or the coffee – but it has a certain dark, rich flavor that totally has me under it’s spell!

I adapted this recipe from one I found on tastykitchen.com. I love this so much, I’ll definitely be making it again. Although I might try a different frosting – this recipe calls for a chocolate cream cheese frosting, which I think is great, but it’s very heavy and I almost think a lighter style of frosting might do this dark and lovely cake more justice.

Also, because of the ingredients in the frosting, it’s best to keep it refrigerated – and I’m pretty sure you don’t have to refrigerate other types of frosting. You can try and decide for yourself – either way it’s still amazing. Enjoy!

Ingredients – Cake

  • 1-¾ cups all purpose flour
  • 2 cups sugar
  • ½ cup cocoa
  • 2 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup strong, hot coffee
  • 1 cup buttermilk
  • ½ cup oil
  • 2 whole eggs
  • 1 tsp vanilla

Ingredients – Frosting

  • ½ cup (1 stick) butter, room temperature
  • 8 oz cream cheese, room temperature
  • ½ cup cocoa
  • 1 lb powdered sugar
  • 1 tsp vanilla

Directions

Preheat oven to 350. In a large bowl, sift together flour, sugar, cocoa, baking soda, baking powder, and salt.

Add the remaining ingredients and combine well. Pour into three 8″ pans or two 9″ prepared pans. Bake 30 – 35 mins, or until toothpick comes out clean.

Cool for ten minutes and remove cakes from pans. Cool completely.

For the frosting, cream butter and cream cheese together. Then with the mixer on low speed, slowly add cocoa and powdered sugar, then the vanilla. Increase mixer speed and mix til well blended. If frosting is too thick, add 1 tbsp milk. Spread frosting on the completely cooled cake.
